Welcome to Simply Comfort Eats! I’m Mia Parker, the recipe developer, comfort food connoisseur, and home cook behind everything you see here. My journey with comfort food began in my grandmother’s Michigan kitchen, where pot roasts simmered on Sundays and homemade mac and cheese was the cure for every childhood disappointment.

After spending twelve years in corporate marketing in Chicago, I found myself increasingly drawn to my kitchen during evenings and weekends—testing and tweaking the comfort classics I grew up with. When a health scare in 2018 forced me to reevaluate both my lifestyle and diet, I discovered that comfort food didn’t have to mean heavy or unhealthy. That revelation sparked my career change and the creation of Simply Comfort Eats.

My cooking philosophy centers on the belief that comfort food is more than just calories—it’s emotional nourishment. I create recipes that honor traditional flavors while fitting modern lifestyles, dietary needs, and health consciousness. Every dish on this site has been tested multiple times in my home kitchen using equipment and ingredients that any home cook can access.

What fuels my passion is reinventing classics without losing their soul. I’m particularly drawn to making comfort food more inclusive—creating gluten-free, dairy-free, or plant-based versions that don’t feel like compromises, streamlining complex recipes for busy weeknights, and preserving cultural food traditions for new generations.

When I’m not in the kitchen, you’ll find me browsing farmers markets in Minneapolis (where I now call home), hosting Sunday suppers for friends, or exploring regional comfort food classics during road trips with my husband Dave and our rescue dog, Biscuit.

The most meaningful part of this journey has been hearing your stories—how these recipes helped you recreate a grandmother’s signature dish, provided comfort during difficult times, or became the new favorite for family gatherings. These connections remind me why comfort food matters.
